Summer Salads!

Salad makes a delicious (and refreshing) summer meal. For the healthiest salads try experimenting with as many colors as you can. A salad with spinach, carrots, purple cabbage, radishes, yellow peppers, celery, tomatoes and cauliflower will POP with color!

Don't forget to add a protein to your salad if you want to count it as a meal. Here are some easy and delicious proteins to add to your salad:

  • chopped egg

  • shredded cheese

  • kidney beans or garbanzo beans

  • left over sliced chicken

  • drained can of tuna

  • sunflower seed kernels

Top with your favorite dressing (NOT fat free!). Many of the healthy antioxidants in the veggies CANNOT be absorbed without fat. Of course don't drown your salad in dressing!

This summer try a chopped salad. That's right. Simply make your salad as you normally would and then chop it very finely and enjoy!! Kids who are picky with salads often LOVE the chopped version.
