Plant-Based Meals

A balanced meal must include a significant protein source but meat does NOT have to be on the menu! Most people have heard of the health and environmental benefits of plant based diets. According to the Meatless Monday movement website, “cutting out meat one day a week is a way for individuals to do something good for themselves and for the planet”. In addition to being healthy and delicious, meatless meals are often WAY less expensive! Even if you have no intention of becoming a vegetarian, consider the possibility of trying a few plant based meals each week. There are a TON of great recipes out there for turning beans, lentils, tofu, and other vegetarian proteins into tasty and filling meals. See for yourself! Open–Faced Smashed White Bean And Avocado Club (Adapted from Real Simple website)


  • 15 ounce can white beans, rinsed and drained

  • 1 tablespoon of extra virgin olive oil

  • ¼ tsp. salt

  • Black pepper to taste

  • Red onion, thinly sliced

  • Cumber, thinly sliced

  • Baby spinach

  • One avocado, thinly sliced

  • 4 thin slices whole grain or rye bread, toasted


  1. In a medium bowl, combine the beans, oil, salt, and pepper.

  2. Mash the mixture with a fork, leaving some clumps

  3. Spread the mashed bean mixture between the 4 slices of bread

  4. Top with onion, cucumber, spinach and avocado
