Easy Summer Meals

When the weather turns warm, it's time for easy meals that are cool, colorful and a CINCH to prepare! Here are a few ideas that are certain to please:

Chilled tuna salad: Serve it up with tomato wedges and a few whole grain pita triangles. Frozen grapes make a great dessert. Open faced sandwiches: Spread a toasted slice of whole grain or rye bread with mayo or your favorite mustard. Then add several slices of turkey and a slice of your favorite cheese. Top with baby spinach, lettuce, sliced onion, tomato and avocado. End the meal with a chilled wedge of watermelon. Cold shrimp: Served with a side of shredded cabbage, cilantro and lime juice, along with a corn tortilla. Consider strawberries or blueberries for dessert.

TIP: Cold leftover chicken is great if you don’t have shrimp! Chef salad: Top a salad with protein such as chopped egg, sliced left over chicken, sunflower seed kernels, canned chick peas and / or shredded cheese. Try freezing vanilla Greek yogurt to serve as a dessert.

TIP: To enjoy salad in a totally different way, try a chopping it finely. BLT lettuce wraps: Place 2 or 3 strips of crispy bacon and a bit of chopped fresh tomato onto a large lettuce leaf. Roll up and enjoy. Serve with a boiled egg. For a sweet ending to this meal try crisp apple slices sprinkled with cinnamon. Try Something New!! Create your own black bean salad. It’s easy! This can be a main dish OR it may be served as a side dish (you will of course need to double or triple the recipe if this will be the main dish): 1. Start with one, 15 ounce can of black beans, rinsed and drained well. 2. Stir in several chopped raw veggies: bell peppers, onions, celery, parsley or cilantro, grated carrots, etc. 3. Add garlic powder and chili powder (start small because you can always add more!) 4. Stir in ½ tsp. vinegar and 1 tablespoon of olive oil 5. Mix well and allow to chill for at least one hour.
