Sweet Potatoes….for Breakfast??!

Imagine starting the day with a delicious, warm, filling meal that is easily prepared in minutes. When this meal is ALSO healthy AND inexpensive, it may be time to open our mind up to the possibility of eating a sweet potato for breakfast!!
Most of us have tried sweet potato fries or the occasional roasted sweet potato with dinner. And what family doesn’t have their own holiday version of sweet potato casserole, dripping with brown sugar and marshmallows?
Dubbed as a “fall superfood” by the Mayo Clinic, the humble sweet potato is high in fiber and is bursting with beta carotene, a plant based pigment shown to fight cancer and aging.
HOW TO COOK A SWEET POTATO REALLY FAST IN THE MICROWAVE:

Pierce a clean, scrubbed medium sweet potato with a fork several times.
Place the potato onto a microwave safe plate (or a paper towel).
Put plate into the microwave oven and cook on HIGH for 5 minutes.
Check if done by inserting a fork or knife (if easy to pierce, potato is done). Return to microwave (if needed) for one to two additional minutes.
NOTE: Add TWO minutes to cooking time for EACH additional sweet potato.
Top hot sweet potato with a sprinkle of cinnamon, a bit of REAL butter and a handful of chopped walnuts or pecans (for protein). Serve with a veggie sausage patty for a really delicious breakfast combo.
