Buttery Carrots with Fresh Basil

Bags of fresh whole carrots are one of the best bargains in the veggie aisle. Carrots may be prepared in hundreds of delicious ways, both cooked and raw. This recipe for making buttery carrots with fresh basil looks SO elegant but is super easy to throw together. Enjoy!


Ingredients

  • One pound of whole, fresh carrots (scraped and washed with ends removed). Do NOT slice.

  • Few drops of water

  • 4 tablespoons of real butter

  • ¼ teaspoon salt (or to taste)

  • ¼ teaspoon pepper (or to taste)

  • 2 to 3 springs of fresh basil leaves, chopped (OR ½ teaspoon dried basil)


Instructions (microwave)

  1. Arrange whole carrots in a glass microwave safe container.

  2. Sprinkle with a few drops of water.

  3. Cover and cook on HIGH for 5 minutes.

  4. Pour off all moisture.

  5. Gently toss with the butter, salt, pepper and basil, being careful not to break the carrots.

  6. Return to microwave and cook uncovered on HIGH for an additional 1 to 2 minutes.

  7. Garnish with sprig of fresh basil or parsley.

Instructions (stove top)

  1. Arrange whole carrots in bottom of pot large enough to accommodate.

  2. Add ¼-cup water.

  3. Cover and bring to boil.

  4. Immediately lower heat and allow carrots to steam for 4 to 5 minutes.

  5. Drain well.

  6. Return to low heat and add butter, salt, pepper and basil.

  7. Mix gently, so as not to break the carrots.

  8. Carefully slide into serving dish.

  9. Garnish with sprig of fresh basil or parsley.
