
German Style Red Cabbage

Fresh red cabbage is beautiful to look at and even better to eat. This vitamin C rich veggie is delicious when added to salads, or when cooked and served with whatever is on the grill. Try this classic version of German style red cabbage.
Ingredients
3 tablespoons avocado or canola oil (or other bland oil)
½ large red cabbage, thinly sliced or shredded (4 cups)
1 large red apple, grated with the peel
2 ¼ tablespoons apple cider vinegar
1 teaspoon salt (more or less to taste)
1 teaspoon black pepper (more or less to taste)
Instructions
Heat oil in large skillet.
Add cabbage and cook stirring occasionally until it starts to wilt (about 5 minutes).
Stir in grated apple.
Add apple cider vinegar.
Season with salt and pepper.
Lower heat.
Cover and simmer, stirring occasionally, until fully cooked (about 35 minutes).
HINT: Do not over-cook! The cabbage should still be a deep purple color when done.
