German Style Red Cabbage

Fresh red cabbage is beautiful to look at and even better to eat. This vitamin C rich veggie is delicious when added to salads, or when cooked and served with whatever is on the grill. Try this classic version of German style red cabbage.


Ingredients

  • 3 tablespoons avocado or canola oil (or other bland oil)

  • ½ large red cabbage, thinly sliced or shredded (4 cups)

  • 1 large red apple, grated with the peel

  • 2 ¼ tablespoons apple cider vinegar

  • 1 teaspoon salt (more or less to taste)

  • 1 teaspoon black pepper (more or less to taste)


Instructions

  1. Heat oil in large skillet.

  2. Add cabbage and cook stirring occasionally until it starts to wilt (about 5 minutes).

  3. Stir in grated apple.

  4. Add apple cider vinegar.

  5. Season with salt and pepper.

  6. Lower heat.

  7. Cover and simmer, stirring occasionally, until fully cooked (about 35 minutes).

HINT: Do not over-cook! The cabbage should still be a deep purple color when done.
