The summer fruits are here... icy cold chunks of watermelon, ripe juicy peaches and sweet blueberries. These fruits are beautiful to look at and delicious to eat as a dessert with your summer meal. When fruit is eaten as a between meal snack, try to include some protein (the addition of protein helps to stabilize blood sugar levels AND helps to keep you satisfied a lot longer).
Here are some COOL ideas for pairing fruit with protein on HOT summer days:
Frozen grapes, eaten with sunflower seed kernels
Icy cold dish of 2% or whole milk Greek yogurt, topped with fresh berries
Small bowl of fresh fruit salad, topped with toasted pecans
Sliced fresh peach served with cubed cheese
Homemade popsicles: blend 2% or whole milk vanilla Greek yogurt together with fresh fruit (berries, peaches or nectarines).
Crisp apple slices served with cottage cheese, sprinkled with cinnamon
