The Simple Pleasure of a Picnic

Summer time is upon us and parents are looking for fun (and inexpensive) ways to entertain the kids. What could be better than a picnic?

 

A picnic can be as simple as enjoying a sandwich on a blanket in the shade at home, or as elaborate as packing a cooler with classics such as deviled eggs, baked beans and fruit salad, to enjoy at one of the many local parks in the area.  Either way….food just seems to taste better when it’s eaten outdoors!

 

You COULD pick up a bucket of fried chicken from a fast food restaurant… OR you could prepare a picnic –friendly feast yourself.  Check out the menu below.

Easy Chicken Salad “Wraps”

Served with

Assorted Raw Veggies and Hummus

And

Fresh Fruit Salad for Dessert

Recipe for Easy Chicken Salad

 

Ingredients

  • 4 cups of cubed or chopped cooked chicken

  • ¾ cup sliced almonds

  • 1 cup chopped celery

  • 1 cup of sliced grapes OR chopped apple

  • ¾ cup of mayonnaise (NOT low fat or fat free)

  • ¼ cup plain Greek yogurt

  • Salt and pepper to taste

Directions

  1. Combine chicken, almonds, celery and either grapes or apple in a large bowl.

  2. In a separate bowl mix together the mayonnaise, Greek yogurt, salt and pepper.

  3. Add the dressing to the chicken mixture and gently stir until chicken is well coated.

Scoop this delicious chicken salad onto a large lettuce leaf.  Roll it up and eat it as a wrap!

 

Picnic Food Safety Tips

  • Keep cold foods COLD! Place freezer ice packs around the foods in the cooler.

  • Bring hand sanitizer and baby wipes or paper towels to assure clean hands before serving and eating the picnic meal.
